My grandma is a pro in making these awesome seedais. When me and my brother used to visit her place for summer. holidays, she used to make this snack specially for my brother. Its his fav snack. The following measurement yield up to 20 cheedais and you can adjust measurements to suit your needs.

Ingredients
- 200 gms Rice Flour (approx.)
- 1 tbsp Elaichi (u0b8fu0bb2u0b95u0bcdu0b95u0bbeu0bafu0bcd) Powder
- 1 cup Jaggery Syrup
- 3 tbsps Ghee
- Vegetable Oil for frying

Instructions
- In a frying pan add ghee and add rice flour to it 1/4 tbsp.
- Keep sautxe9ing until rice flour changes colour
- Then add jaggery syrup and elaichi powder
- The ratio of rice flour : jaggery is syrup is always 1:1/2
- The syrup will be absorbed by the rice flour completely and it will form a dough.Turn off the stove and knead the dough with your hands for about 2-3 minutes.
- Place the dough in a small vessel and just close it with wet towel for about an hour.
- My mom usually says that resting the dough for sometime helps in enhancing the taste of cheedai.
- In case if you can't wait for an hour, you can probably rest for about 15 minutes.
- After an hour rub your hands with ghee and then start making small balls from the above dough.
- Fry those balls and wait till they turn golden brown.
- Crispy Vella Cheedais/Sweet Cheedais are ready for neivedhyam 🙂
