Have already shared recipe of Mushroom Rice that I prepared using Instant Pot here. I used Basmati Rice while making that Mushroom rice however this is the first time I tried using Ponni ParBoiled Rice (சாப்பாடு புழுங்கல் அரிசி) in Instant Pot and thankfully the time settings worked perfectly..Though the in the picture the rice looked a bit undercooked it the texture was perfect in real time.. Me and Shiva both love fluffy (read உதிரி உதிரி 😬) rice so the texture wasn’t an issue. However if you prefer your rice to cook even more then increase the timer settings based on your preference.
I have made Vegetable Rice using Basmati Rice too and it took around 5 minutes in ‘Pressure Cook’ setting and this Ponni Rice took 12 minutes. I used ‘Double Horse’ brand Ponni rice.Also I didn’t have onions at home that when I made this so not including it in the ingredient section..Please add an onion if you have 🙂

- 1 cup Ponni Rice
- 1 carrot
- 5 Beans
- 2 Potatoes
- 3 Small Tomatoes
- 7-8 Mushrooms
- 1/2 green capsicum
- 1 tsp chopped ginger
- 1 tsp chopped ginger
- 1 tbsp yogurt
- 1/2 tsp Turmeric Powder
- 2 tsp Red Chilli Powder
- 2 tsp Coriander Powder
- 2 tsp Garam Masala Powder
- 1 Bay leaf
- 1 Black Cardamom or 3 Green
- 1/2 tsp Saunf
- 1 tsp Kasuri Methi leaves
- 2 small pieces of Cinnamon stick
- 2 tbsp + 1/2Ghee
- 1/2 tbsp salt
- 1 tsp MDH Kitchen King Masala Powder
- 2 tbsp ghee
- 2 tbsp Oil

- Clean the mushrooms and Vegetables. Chop them
- Tune 'Saute' mode on. Heat 2tbsp Ghee, 1 tablespoon oil in the Instant Pot
- Add Bayleaf, Cardamom, Cinnamon and Saunf. Saute for a minute
- Add the veggies,salt and continue sauteing
- Add all the dry powders one by one. And then the yogurt. Make sure the veggies are coated well with the yogurt+spice mix
- Wash Ponni Rice well and add it to the pot
- Add 2.5 cups of water
- Add Kasuri Methi leaves. Add the remaining oil. Give it a mix
- Turn off Saute mode. Turn on 'Pressure Cook' mode. Make sure it is in High Pressure mode
- Set the timer to 12. If you aren't sure how long will the rice take to cook then start with 10 minutes.Basmati Rice generally takes 5 minutes to cook. I haven't tried Sona Masoori so kind of unsure about the timing.Time varies depending on the variety of Rice you use.
- After 12 minutes wait for atleast 5 minutes and then manually release the pressure
- The bottom was clean and no signs of burning. The rice+veggies were cooked well too
- Delicious Vegetable Rice is ready within 30 minutes
- I served this Veg Rice with Raita. You can also serve this with Brinjal Salna or Paneer Gravy or Mix Veg Gravy
