A quick recipe on the blog today.. Made this vegetable rice for our dinner and this is my go-to faux Biryani recipe..No elaborate steps yet very flavorful and delicious. I have used Onion,Carrot, Beans, Potato & Capaicum & peas in this recipe. If you want you can add cauliflower, broccoli,sweet corn and even mushroom, paneer or tofu. The folllwing measurement serves 4.
I cook my Basmati Rice separately for just few minutes.. Once it is 3/4th cooked I remove from boiling water and keep it aside. Then I mix it with vegetable base and let it get cooked for 10 minutes.
Thank God for longer days here I managed to click better pic of the rice even at night today.

- 1 cup Basmati
- 1 onion
- 1 carrot
- 2 potato
- 6 French Beans
- 1 capsicum or use a mix of colored capsicums
- 1/4 cup Frozen Peas
- 1/2 tsp turmeric
- 1 tsp Kashmiri Red Chilli Powder
- 1 tsp Coriander Powder
- 2 tsp Garam Masala Powder
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1 tbsp kasuri methi
- 1 tbsp ghee
- Whole Spices Cardamom, Saunf,Bayleaf,Cloves, Cinnamom - a little bit of everything)
- 1 tsp MDH Kitchen King Masala (optional)

Instructions
- Cook Basmati Rice until its 3/4th done and keep it aside.
- Heat ghee in a pan. Add whole spice, saute for a minute and then add the chopped veggies and the spice powders
- Mix everything together
- Add 1/2 cup water and in low flame make sure the veggies get cooked for atleast 5-7 minutes
- Later add the Basmati Rice, kasuri methi leaves and green peas
- Carefully mix with a spatula. Ensure you don't smash the rice
- Sprinkle 1/4 cup water, lemon juice and close the pan
- Let the rice get cooked along with the veggies for 5-6 minutes in a low flame
- Adjust salt and serve this spice Vegetable Rice and raita of your choice
