I love preparing onepot meals. Easy to cleanup and less mess in the kitchen. This is my fool proof Pulao recipe. When unexpected guests arrive we can manage without panicking and since it can be prepared within 30 minutes, a great time saver too. I didn’t have cauliflower so didn’t mention it in the below recipe. However if you have, do add 10-12 florets.
Please note that quantity of water is the most important thing while cooking with basmatirice. If you add too much, the rice will be mashed up. In general 1 cup of basmati rice requires 2 cups of water and not more than that. In this recipe I have added 1/4 cup of water while boiling vegetables and then added 1/4 cup of plain milk for flavor. The remaining 1.5 cup of water was used later when i added the rice.

- 1 cup basmati rice I used India Gate brand
- 2 cup Chopped Veggies Carrot, Beans, Onion, Potato, Capsicum & handful of green peas
- 2 small Green Chillies
- 5 cloves garlic
- 1 tsp ginger cut into small.pieces
- 1/4 cup Coriander & mint leaves
- 1/4 cup coconut milk Substitute it with Plain Milk if you dont have coconut milk at home
- 1/2 tbsp butter
- 1/2 tbsp salt Adjust salt if necessary
- 1 Bayleaf
- 2 cinnamon sticks
- 5 cardamom
- 5 Cloves
- 1/4 tsp Saunf

- Soak basmati rice in water for about 30 minutes.
- Grind green chillies, garlic and ginger to a fine paste. You can grind mint,coriander leaves with these and make a paste. You can chop the leaves and add them along with other veggies
- Heat butter in a pressure pan or any thick bottomed vessel.Add whole spices one by one.
- Saute for about a minute and then add onions.Once it becomes golden brown add the remaining vegetables
- Add a pinch of salt and 1/4 cup of water so that veggies will start to cook
- Now add the green chili+leaves paste and basmati rice
- At this stage add coconut milk or normal milk. This gives a good white colour to pulao along with its sweetness
- Mix everything with a spatula gently and close your pan
- Let it cook in low flame for about 10-12 minutes.
- As soon as the Rice gets cooked you can turn off the flame, leave the pan open for few minutes
- Use a fork and mix pulao. When it is hot the rice tends to break down and hence we need to be gentle while mixing the pulao
- Serve with raita or any gravy of your choice.
- I made mushroom masala and mixvegetable raita as sidedish.
1. If you are using Ponni Rice, then you can Pressure Cook the rice first, prepare the vegetable masala separately and mix them together
2. Or you can prepare the vegetable masala, add required water and cook the rice in electric rice cooker. For 1 cup of Ponni Rice you will need 3.5 cups of water, 1/4 cup milk and after approximately 25-30 minutes Pulao will be ready in rice cooker. (I followed the exact same recipe today, used ponni rice, prepared the masala separately, added it to rice cooker. belowpic & video are taken today 31/1/2019 for your reference)
