I have been mostly making simple One Pot meals or Variety Rice during the lockdown time. No matter how minimal your meals are the kitchen sink will always be full 🤪💁 I prepared this delicious Pulao for lunch few days ago. This time I used Sona Masoori Rice, cooked the pulao directly in Pressure Cooker. I have already shared Pulao recipe using Basmati Rice. You can check the recipe here. Very easy to make with whole spices and vegetables. I made Aloo Mutter as sidedish so didn’t add Potatoes and Green Peas in the Pulao. You can add them if you want 😊
Plain Milk adds mild sweetness to the Pulao. If you don’t have plain milk you can substitute it with Coconut Milk or any other milk of your choice. The following measurement serves two people. I have not tried the recipe with Brown Rice. If you are using Brown Rice try soaking the rice for atleast 2 hours before cooking them Pressure Cooker

- 1 onion
- 1 carrot
- 10 Beans
- 20 Cauliflower florets
- 1/2 capsicum
- 2 Green Chillies small
- 1 teaspoon finely chopped ginger and garlic pieces
- 1/2 cup milk
- 2 tbsp ghee
- 1 Bay leaf
- 1/4 inche Cinnamon Stick
- 1/2 teaspoon Saunf
- 4 Green Cardamoms
- 3 Cloves
- 1/2 teaspoon Black Pepper Corns
- 1 teaspoon salt

- Chop veggies lengthwise
- Heat one tablespoon of Ghee in Pressure Cooker
- Add Bayleaf, Cinnamon, Green Cardamom, Saunf and other whole spices one by one. I didn't have Star Anise hence didn't mention it in the ingredient list. If you have one you can add them here
- Saute for a minute
- Add the chopped veggies and saute for 2-3 minutes in low flame
- Wash the Rice thoroughly
- Add it to the Pressure Cooker
- Add 3 cups of water and half cup of milk. I use Double Horse Brand's Sona Masoori rice which usually requires 3.5 cups of water for 1 cup of Rice. In case if your Rice Variety gets cooked with just 3 cups of water then use 2.5 cups of Water + 1/2 half cup milk. It all depends on the variety of Rice you use 🙂
- If you are adding Frozen Peas, Mint or any other fresh greens add them to the cooker now
- Add salt, one tablespoon ghee and mix everything together
- Let it get pressure cooked for upto 4 whistles
- Leave it untouched until the pressure releases naturally
- When you open the cooker the Pulao will look like the picture below
- Leave it to cool for 5 minutes and then use a fork gentle give it a mix. Rice might get mashed well when you mix when it is hot. Hence the resting time
- Fluffy Pulao ready to be served
- I prepared a delicious Aloo Mutter in Instant Pot to go with this Rice. Shall add the recipe soon. You can serve it simple Raita or Daal or any Gravy if your choice
