This is popular Indo-Chinese dish and can be prepared in many ways. Just add veggies of your choice, can even add egg too.You don’t have to stick to a recipe for making this dish.I have used vegetables available in my pantry.I used IndiaGate Basmati rice.I prepared corn cheese balls and Paneer Butter Masala as accompaniments.The following measurement serves two people.

- 250 gms Basmati Rice
- 2 cups Onion Capsicum Beans Carrot Spring Onions , , , , Spring s (chop them finely)
- 50 gms Green Peas Fresh
- 5 Pods Garlic
- 1/2 tbsp Salt
- 1/2 tbsp Black Pepper powder
- 1/4 tbsp Soy Sauce
- 1/2 tbsp Ginger chopped ginger Paste or finely
- 2 tbsps Cooking Oil

- Soak Basmati rice in plain cold water for about minutes 20.In a deep bottomed pan boil 2 cups of water with a pinch of salt
- Once they start boiling, add basmati rice It will take minutes to cook.Once the rice is cooked, spread it on a vessel and cool it for sometime.This will help to avoid rice grains sticking to each other
- First partially cook beans,carrot and peas. Let them be crunchy.Do not over cook.
- Heat oil in a frying pan add garlic pods,onions,cabbage,capsicum,spring onions and salt.
- Saute them for about few minutes until they are half cooked and later add the boiled veggies.
- Continue sauteing for about 2-3 minutes.
- Then add salt,pepper,soy-sauce to the pan.Saute until salt,pepper gets mixed with the veggies.
- Finally mix the cooked rice along with the vegetables.
- Serve fried rice with any gravy or Manchurian of your choice.I prepared Paneer Butter Masala gravy as a side dish.
