Poha or Flattened Rice is an important breakfast ingredient in many parts of our country. There are various ways you could prepare this. I used lots of veggies and it took around less than 30 minutes to make. You can serve Poha upma with either plain yogurt or chutneys.

- 200 gms Rice Aval Thick Flakes /
- 1 Onion
- 1 Tomato
- 1 Carrots
- 4 Beans
- 50 gms Peas Boiled (optional)
- 1 Potato
- 2 Green Chillies
- 1/2 tbsp Chilli Powder
- 1/2 tbsp Coriander Powder
- 1/4 tbsp Turmeric
- 1/4 tbsp Asafoetida / Hing
- 1 tbsp Vegetable oil
- Curry Leaves
- 1/4 tbsp Mustard Seeds
- 1/4 tbsp Urad Dal

Instructions
- Chop carrot, beans and potato into small pieces. Par boil it in a pressure cooker and keep it aside
- Soak avalrice flakes in water for 10 minutes
- Wash and drain the water completely. If you soak in water for a long time then the aval becomes soggy and it ruins the taste of Upma
- In a frying pan heat oil
- Add mustard seeds,urad dal and curry leaves. Let them splutter
- Add green chillies, onions and tomatoes. Sautxe9 it for about 5 minutes
- Add the par boiled vegetables along with green peas to the pan
- Add the dry powders and salt to the above mixture
- Now add aval/rice flakes and if you feel the mixture is dry then add very few water drops
- Close the pan with a lid for about 4-5 minutes
- Let the spices get mixed with the vegetables and rice flakes
- Aval Upma is ready to be served with Yogurt and pickle.
