I love hot spicy soups and the country where we live has such an unpredictable weather 🙂 It was beautifully sunny few days back and suddenly the temperature became low it was raining here. Thought of making yet another simple hearty soup for my Dinner Challenge. I came to know about Thukpa only through Instagram. When someone posts their travel pics with the beautiful background be it from Nepal/Himalayas/Sikkim & other areas holding a plate of Momos, Maggi Noodles or Thukpa or Chai I truly wish someday I will get an opportunity to visit those wonderful places and indulge on all that delicious food too 🙂
I have never tasted the Authentic Thukpa before. All I know from the pics is that it has Noodles, meat or veggies, spices, oil, topped with some fresh greens or crunchy onions. I made my version on Thukpa in Instant Pot.You can prepare this in pressure cooker or in a wide bottomed vessel too

- 100 gms Whole Wheat Noodles You can substitute it with Rice Noodles or any noodle of your choice
- 1 onion
- 1/4 cup Chopped Cabbage
- 5 Beans
- 1 carrot
- 1/2 capsicum
- 1/2 cup Spinach Leaves
- 1/4 cup Frozen Corn
- 1 tablespoon Finely Chopped Spring Onions
- 1 tablespoon Corainder Leaves
- 1 teaspoon finely chopped ginger
- 1 teaspoon finely chopped garlic
- 1 tsp Turmeric Powder
- 1 tsp salt
- 1 tsp Coriander Powder
- 1/2 tsp Red Chilli Powder
- 1/2 tsp soy sauce
- 1 teaspoon sesame oil you can use any variety of oil

- Wash and chop the veggies
- Turn on 'Saute' mode in Instant Pot
- Add onions and finely chopped ginger garlic
- Saute for a minute and add all the other veggies one by one
- Continue sauteing for one or two minutes
- Break the dry noodle nest and add it to the pot
- Add the frozen corn, salt and other spice powders
- Add 1.5 cups of Water and drizzle soy sauce
- Mix everything together
- Cook in 'High Pressure' for 8 minutes
- After 3 minutes manually release pressure. The noodles will be well cooked and the soup will look like this. Mix it well. Adjust salt.
- It was raining in the evening and i didn't have proper lighting. Hence the color looks slightly different here 😁 I managed to take one pic in the natural light today morning with leftover soup.
- Delicious Thukpa/Veg Noodle soup is ready. It was so filling and light on tummy too
