I love hot spicy soups and the country where we live has such an unpredictable weather It was beautifully sunny few days back and suddenly the temperature became low it was raining here. Thought of making yet another simple hearty soup for my Dinner Challenge. I came to know about Thukpa only through Instagram. When someone posts their travel pics with the beautiful background be it from Nepal/Himalayas/Sikkim & other areas holding a plate of Momos, Maggi Noodles or Thukpa or Chai I truly wish someday I will get an opportunity to visit those wonderful places and indulge on all that delicious food too
I have never tasted the Authentic Thukpa before. All I know from the pics is that it has Noodles, meat or veggies, spices, oil, topped with some fresh greens or crunchy onions. I made my version on Thukpa in Instant Pot.You can prepare this in pressure cooker or in a wide bottomed vessel too
