Cutlet is such a filling snack and nutritious too. During childhood train journey Appa (my father) used to get these cute little “heart-shaped” cutlets without fail. This is the first i prepared them at my home and it was nostalgic. In case if you are cautious about calories you can pan fry them instead of deep frying. However the crispiness of the outer layer is best achieved while deep frying them.With the following measurements 8-10 cutlets can be prepared.

Ingredients
- 2 Potato
- 1/2 cup Onion (chopped)
- Carrot Cauliflower beans green peas capsicum , , , , bowl of these vegetables finely chopped
- 1 Green chillies
- 1 tbsp Saunf (sombu in tamil)
- Curry leaves few
- 1/4 tbsp Ginger Garlic paste
- 2 cups Bread Crumbs (readily available in Departmental stores)
- 3 tbsps Maida All purpose flour or
- to taste Salt
- Vegetable Oil Sunflower oil or to deep fry
- 1 cup Water

Instructions
- Mix Maida with water and make it as a fine paste. Let the consistency be a bit thick
- Boil the peas and potatoes together
- Heat oil in a kadai and add saunf to it.Let it splutter
- Add curry leaves,green chillies,onion. Saute for about minutes two
- To this add the chopped veggies,salt and saute for about minutes 5 6
- Once the vegetables are partially cooked add boiled potatoes,peas
- Mash them together
- Now divide them into ten equal portions(samll balls)
- Squeeze them between ur hands so that a disc like shape is formed
- Dip the disc in maida paste and then coat them evenly with bread crumbs
- Leave bread crumbs coated discs undisturbed for about 10 minutes
- In the meantime heat oil in a pan
- Deep fry discs 3 to 4 at a time(Depending on the size of ur pan) and remove it from oil once they turn golden brown color
- Place it in a tissue paper and remove the excess oil
- Serve it with Green Chutney and Tomato Ketchup
