‘வறுத்து அரச்ச பொடி’ means a spice mix in tamil, that is basically prepared by dry roasting the ingredients.This spice mix is generally used in our households while making ‘Sundal'(offering prepared during navarathri festival). However I use it while preparing any dry sabzi too. You can store it in an air tight container and it will stay good for about a month. The spices used here adds a very nice flavor and aroma to the dish that you are preparing. Adjust the measurements according to your needs.

- 1/2 cup Channa Dal
- 1/2 cup Coriander Seeds
- 10 red chillies
- 1/2 tbsp Methi Seeds
- 1 cup Grated Coconut
- 1/2 teaspoon Asafetida

Instructions
- Dry roast coconut in a nonstick pan.
- You don't have to add oil while preparing this spice powder.
- Dry roast channa dal,methi seeds,coriander together until golden brown.
- At last dry roast redchillies with a pinch of salt & hing
- Once they are cooled down a bit, grind together to a coarse powder and store them in an airtight container.
