This is one of the most popular snacks in Tamil Nadu. Especially on rainy day evenings munching these yummy bondas with hot Tea or coffee is absolute bliss. You can serve this either with coconut chutney and sambar,or you can eat it with tomato ketchup too 🙂
The recipe uses one major ingredient that is Urad Dal(Black Gram ).You need plain whole urad dal without skin.The texture of the bondas should be crispy on the outside but soft on the inside. The following measurement yields around 20-25 medium sized bondas.

- 2 cups Urad Dal
- 1 tbsp Black Pepper
- 1/4 tbsp chopped Ginger Finely pieces
- 2 Green Chillies
- 1 tbsp salt
- Curry Leaves few
- 1/2 tsp Hing

Tips for grinding the perfect battar
- Soak urad dal for at 2 least hours (maximum upto 4 hours)
- Drain the soaked water completely.In a mixie or using wet grinder you can prepare the batter
- Add water little by little while grinding.You will need 1/4 cup water approximately for grinding Urad dal 2 cups
- Do not add too much of salt while preparing the batter. Add a little while grinding and then mix the remaining amount later
- Make sure the consistency of the batter is not too runny
- Avoid adding rice flour or cornflour to the batter to get crispy bondas. This might make the bondas a bit harder.Avoid grinding green chillies, curry leaves and other spices along with Urad Dal.The batter should be soft and smooth
Method of Preparation :
- Grind Urad dal to a smooth & fluffy batter. The tips given above will help in achieving a perfect batter.
- Once the batter is ready add the remaining ingredients such as Pepper,curry leaves,green chilli, hing,ginger and salt to it
- Mix everything well.
- Heat oil in a kadai.
- Keep water in a bowl. Dip your hands in bowl and then take small portion of batter and add it in the pan.
- Alternatively you can use a ladle,take desired amount of batter and pour it in oil.
- Once they are golden brown remove the bondas from oil.
- Drain excess oil in a kitchen tissue.
- Serve hot with coconut chutney or sauce.
