The first time I had Nachos was in Cream Centre Chennai and I even tried recreating it at home so many years ago 🙂 Until then I didn’t even know the slight orangeish tomato dip existed 🙂 Within few weeks I tried recreating a low key Cheesy Nachos at home. You can check that Tomato Salsa recipe here. After moving to UK I was able to explore Mexican cuisine even better. ElMexicana and Chilango are the two places we frequently visit and can definitely say the recipe am sharing below tastes as good as the ones you get in those restaurants.
I used a mix of Cherry Tomatoes and Irish Vine Tomatoes. Cherry tomatoes add a lovely tangy taste and bright color to the Salsa.
You can use any variety of Tomatoes that are available in your region. The color of the Salsa depends on the variety of tomato you use.. I never add ready made Tomato Paste or Canned Tomatoes to my Salsa recipe. Am used to making it with fresh Tomatoes. However you can follow the same recipe below and try it with canned tomatoes as well.
Salsa tastes good for upto a week if stored in refrigerator. I usually make small batch and try to finish it off within a day or two. The salsa can be used as a Dip with Nachos chips, in Burrito bowls, add it even to our Regular Rotis 🙂 I made a Bajra Flour Chapathi Taco recently. Added this Salsa in it. Tasted so good 😋😋
Few weeks back I made a full Mexican Feast for our lunch. I couldn’t take step by step pics 🙂 Have added the recipes of Guacamole, Lemon Coriander Rice and Bean Chili as well. Click the links to read those recipes

- Add 1/2 onion, 2 roughly chopped vine tomatoes, chilli powder, spring onion and garlic pieces
