This is one of Shiva’s favorite Lunchbox menu and I have prepared it often in the last few months.. With very few ingredients it tastes so good. I love adding Chickpeas to my variety rice recipes. Along with the added protein, it also helps to keep us full for a longer period of time. In this recipe I used only Sambar Powder to add spice to the base Tomato mix however if you don’t have Sambar Powder handy you can substitute it with a tsp of chilli powder + tsp of coriander powder.

- 2 cups Cooked Quinoa
- 1 onion
- 3 Tomatoes
- 1/2 tsp Ginger Garlic pieces you can add GG paste too
- 1/2 cup Boiled Chickpeas
- 1/2 tsp turmeric
- 1/2 tbsp Sambar powder
- 1/2 tsp Hing
- 1/2 tsp salt adjust according to your preference
- 1/2 tsp Mustard Seeds
- 1/2 tsp jeera

- Cook Quinoa by following the instructions as mentioned in the link above
- Heat oil in a frying pan add mustard seeds & jeera seeds. Let them splutter
- Add ginger garlic pieces, chopped onions & tomatoes, turmeric, salt, hing and sambar powder one by one
- Saute well
- Reduce the heat to medium and continue sauteing for 4-5 minutes
- Splash little water and let the tomatoes get cooked well
- Add chickpeas and let it absorb the spices. If you don't have chickpeas you can add frozen green peas or sweet corn too
- Now add cooked quinoa, use a fork and mix everything together. Close the pan
- Let the whole Tomato Quinoa get cooked for a minute or two
- Adjust salt. Garnish with fresh herbs if you have and serve this delicious Tomato Quinoa with Raita
- Perfect lunchbox dish that can be prepared within few minutes and with very minimal ingredients
