Curd Rice (தயிர் சாதம்) is one the most popular items of Tamil Nadu. This rice is considered as the ultimate comfort food by most of the people. Adding tadka (தாளிச்சு கொட்டிய தயிர்சாதம்) to the rice enhances the flavor. Few people add a tbsp of butter to the rice and it is believed that adding butter will give a pure white color to the rice. I haven’t added it however you could try adding butter and see how it comes out. During this Navarathri festival I prepared curd rice on Day 7 of the festival as an offering to God.
My Notes : The rice should be cooked well and it should not be grainy. Even if you are using Basmati rice make sure you add some extra water and let it get cooked until mushy. The rice might become thick after some time. Hence make you prepare this curd rice just before serving. If you would like pack this rice to a party or get together you can add some extra milk to prevent the curd becoming sour.

- 2 green chillies
- 1/2 tsp chopped ginger pieces
- curry leaves few
- 1 pinch hing
- 1/2 tsp mustard seeds
- 1/2 tsp urad dal
- Coriander leaves for garnishing

- For curd rice the rice has to be cooked well, it should not be grainy. So cook rice with extra water
- Rice : water ratio has to be 1:31/2. For one cup of rice you need 3.5 cups of water
- Once the rice is cooked spread them in a wide bowl, mash them and let it cool completely
- Next add milk and yogurt. Mix it well with rice. Add 1/2 tsp of salt
- Prepare Tadka with mustard seeds, urad dal seeds & curry leaves. Add this to rice
- Adjust salt accordingly
- Garnish with coriander leaves
