Thattai is a crispy snack that is also prepared as one of the neivedhyams during Krishna Jayanthi. If you have rice flour and urad dal flour ready then you can make thattai within 20 minutes. In case if you do not have urad dal flour you can use roasted gram powder( பொட்டுக் கடலை மாவு) instead. With the following measurement you can make around 15 thattais.
Let the thattais cool for about 10 minutes. Do not place them in a container and close them immediately.It will become soggy. So wait for sometime and then store it in a container. The ratio of Rice Flour : Urad Flour/Roasted Gram Flour is always 3 : 1.

- 1 cup Rice flour
- 2 tbsps Urad Dal Flour
- 2 tbsps Unsalted Butter
- 1/2 tbsp Chilli Powder
- 2 tbsps Channa Dal (u0b95u0b9fu0bb2u0bc8u0baau0bcdu0baau0bb0u0bc1u0baau0bcdu0baau0bc1)
- Curry Leaves few
- 1 tbsp Salt
- 1 tbsp Hing/Asefotida
- Oil for frying

Instructions
- Soak channa dal for about 20 minutes
- Mix rice flour,roasted gram dal flour(pottukadalai maavu) and urad dal flour with salt, butter
- Then add curry leaves, soaked channa dal, chilli powder, hing to the above mixture
- Gently add water to the above mixture and make it to a smooth dough
- Make small balls from the dough
- Grease a plastic sheet/cover with a oil tbsp.
- Flatten the dough using your fingers and let it be thin
- In the meantime heat oil for frying
- Now transfer the flattened dough to oil and start frying
- Repeat the same steps for the remaining balls
- Once it is golden brown colour remove the pan and place them on a tissue paper so that the excess oil from thattai is drained
- Hot thattais are now ready
- Channa dal and curry leaves add great flavour to the dish
