Instructions
- Preparing Dough :
- Soak rice in water for about hour one
- Rinse and drain water completely
- In a mixie grind rice to a smooth batter by adding little water at regular intervals
- Within 10 minutes you will get a smooth white batter
- Heat sesame oil in a non stick frying pan
- Add the rice batter, salt and keep on stirring.Ensure no lumps are formed.
- Once the rice is cooked, it will start leaving the pan.
- In this stage turn off the stove. Knead it to a smooth dough and make equal sized small balls.Close it with a warm towel.
- Preparing Poornam/Coconut filling :
- Heat 1/4 tbsp of ghee in a kadai.
- Add shredded coconut. Saute until it becomes light golden color.
- Then add jaggery and cardamom powder.
- Keep sauteing for a minute or two. Do not add water.
- Jaggery starts melting and it will be mixed with coconut completely.
- Coconut poornam/filling is ready.
- Kozhukkattais :
- Apply some sesame oil in your hands and take a dough ball in your hand.
- Start forming a cup with dough ball and keep the filling inside.
- Close the filling and make your desired shape.
- This is the most difficult part. Try not to add too much of filling. This will break the outer layer of the kozhukkattai.
- Steam those sweet kozhukkatais in steamer or in idli-plates for 3-4 minutes.
- Do not over steam the modhagams. You will end up loosing the color of modhagams and jaggery will start to ooze out.
- Sweet kozhukkattais/Modhagams are ready for Naivedhyam.
