This is one of the quickest sundal recipes that I prepared during this navarathri season. I used Frozen Sweet corn kernels. If you are using fresh corn then make sure to cook it in boiling water for about 15-20 minutes with a pinch of salt and turmeric. You can add chopped cucumber pieces,even some grated carrots and then squeeze some lemon juice on it. This will be a great side salad for your main meal.

- 1 cup Sweetcorn Frozen
- 1/2 tsp salt
- pinch turmeric a
- curry leaves few
- 1/4 cup coconut Grated
- 1/2 tsp Mustard Seeds
- 1/2 tsp urad dal
- Corainder leaves for garnishing
- 2 Chillies Dried Red
- cucumber Finely chopped pieces few (optional)

- Thaw frozen corn from freezer and then boil it in water with a salt for about minutes pinch of 5
- Once they are soft strain the water
- Heat oil in a nonstick pan and add mustard seeds,urad dal and curry leaves
- Let them splutter and add dried redchillies,hing,turmeric
- Saute for minute or then add boiled sweet corn two
- Mix everything well and atlast add grated coconut,coriander leaves
- Let the whole mixture gets cooked for about 5 minutes in slow flame
- Sweet corn sundal is ready to be served
- You can even prepare this as an evening snack to kids
