Savory Maida biscuits are also called as ‘Kalakalaa’ in tamil. I don’t know the reason behind this 🙂 I have seen people referring to these spicy biscuits as kalakala(கலகலா) 🙂 In general maida biscuits can be prepared in two ways. Either a sweet one or savory version. I am sharing the savory recipe here. You can cut these biscuits in any desired shape you want. Though the most popular one is diamond shape. From the following measurement you can prepare upto 200gms of biscuits. Adjust your measurements accordingly.

Ingredients
- 1/2 cup all purpose flour Maida
- 1/2 tsp salt
- 1 teaspoon Red Chilli Powder
- 1 teaspoon Hing பெருங்காயம்
- 1 tsp ajwain
- 1 tbsp ghee
- Oil for deep frying

Instructions
- In a wide bowl mix all the ingredients except oil. Form a stiff dough by adding water. Divide the dough into equal sized balls and roll them to rotis.
- Using a knife or pizza cutter & cut maida roti into thin strips and then make pieces
- Fry them in hot oil until golden brown
- Crunchy Savory Maida biscuits are ready to be served along with a cup of hot masala chai/coffee
