When you order mini meals in any restaurants like Saravana Bhavan , A2B the Sambar Rice will be of smooth, melt in mouth texture. Unfortunately the quantity they provide is very less and most of it is occupied by Shallots & Drumstick 😉 Thats a different story altogether We can achieve the same taste when we prepare at home as well. This is different from Karnataka’s BisiBele Bath.
When I was working Banglore me and my friends visit CMH road A2B regularly. I order mini meals for lunch and would request the server to give me sambar sadham instead of their kesari/sweet pongal. 😬😬 Shallots add a great flavour to this rice. So make sure to use Drumstick & shallots generously.
My Notes :
1. For Sambar Sadham, the rice should be completely mashed up and not grainy.
2. Also sambar sadham has a tendency to thicken after you have prepared it. To avoid this issue, while pressure cooking the rice+dal mixture add extra water than required.
3.Normally if you add 3 cups of water for cooking one cup of Rice, now add 5 cups of water for (1 cup Rice + 1/2 cup of Toor daal) .Mash the rice & dal mixture completely before adding to sambar.
4.The quantity of Sambar should be more. Add rice+dal mixture to Sambar & not vice versa. So if you see there is a shortage of sambar you can add less quantity of rice.
5.Even after all this, if your sambar rice has thickened before serving, then boil 1/2 cup of plain water, add it to sambar sadham. Heat 1/2 tsp of oil in Tadka pan, add 1/2 tsp of sambar powder. This step is done to ensure that there is no raw smell of sambar powder. Adjust salt, keep stirring for 5-8 minutes.
6.You can use also add veggies like Brinjal,Capsicum,Radish along with other vegetables mentioned below
7. I served the rice with just Banana Chips. However if you have prepare potato fry. It is the best combination for Sambar Sadham

- 1 cup rice (Par Boiled,Boiled or Raw rice)
- 1/2 cup toor dal
- Lemon Tamarind size
- 2 cups tamarind Thin extract
- 1/2 tsp salt & turmeric
- 1 tbsp Sambar powder Add extra owder depending on the spiciness of the powder you use
- 1/2 cup coconut Shredded
- 1/4 cup Coriander Seeds
- curry leaves Few
- 1/2 tsp Mustard Seeds
- 1/2 tsp Jeera Seeds
- 2 Chillies Dried Red
- 1/2 tsp ghee
- 10 Shallots
- 2 Carrots
- 10 Beans French
- coriander leaves Few for garnish

- Pressure cook Rice + ToorDal together with a pinch of salt, turmeric for upto 5 whistles.
- Grind coconut, tamarind, coriander seeds & sambar powder to a smooth paste.Add little water while grinding.
- Heat a tsp of oil in a thick bottomed pan, add shallots first. Saute for a minute or then add Drumstick, Carrots, Beans and potatos.
- Add 1/4 cup of water, a pinch of salt & turmeric.
- Let the veggies get half cooked. It will take approximately 5 minutes. Later add thin tamarind extract,coconut paste and let them boil in low flame for another 10 minutes. The raw smell of masala will go off.
- At this stage, add the rice+dal mixture on the pan. Keep stirring and so that the rice doesn't get stuck at bottom of the pan.
- Adjust salt and after 5 minutes you could see that rice coming together.
- Finally before serving prepare tadka add it on top of the rice.
- Heat ghee in a Tadka Pan, add mustard seeds, jeera seeds. Let them splutter Then add hing, redchillies and curry leaves.
- Flavorful tadka is ready to be added on Sambar Sadham. Garnish it with coriander leaves.
- Two weeks back, I prepared Curd Rice along with this delicious Sambar Sadham and served it with banana chips & MormiLagai

WHat it the quantity of sambhar powder?

Sorry for not mentioning the quantity shall update it in the post. It depends on the quantity you will be making and the spiciness of your sambar powder. I use 1 full tbsp Sambar Powder if I have to make for the two of us. It is generally not a very spicy one.
