There is something so comforting about Raw Banana fry, Sambar with Rice & Appalam. Especially Tamilnadu has its own unique way of preparing this vegetable.. Small restaurants serve it in a different style (with a slight tinge of ginger+garlic+garam masala) in their lunch menu & different households prepare these poriyal/fry in different ways. Black Pepper,Chilli Powder,Sambar Powder are the three different spices you could try while preparing this Banana fry(vazhakkai varuval) Also even chopping style can be different. You can cut them into slightly rectangular chunks/small pieces or you can even grate them
1. The first picture on the left side above is grated version of rawbanana (Podimas)
2.The next one is chopped raw banana fry with sambar powder being used to add spice to this fry
3. The third picture is raw banana cut into bigger chunks. This was servedat my friend’s place 🙂
Like this there are so many variations of Rawbanana that are prepared in SouthIndia. The recipe that am sharing below uses chilli powder.
My Notes :
– If you have to prepare for a larger crowd then do it in batches or use two different pans. Since over crowding willnot yield the same result
– I have used two medium sized raw bananas for this
– Try and make sure the thickness of the banana pieces are more or less similar..It ensures even cooking time
– Chilli powder can be added according to your taste preference. The below measurement is slightly spicier
– Also dont add too much water as it will make the fry mushy
– If you are packing them in tiffinbox wait for it to cool down for few minutes and then pack. This step will avoid soggyness
