Temple Prasadhams have such an unique taste be it Pongal or Puliodharai😋😋 I don’t remember which cookery show it was, the cooks in Temple were preparing large amount of Puliodharai to be served as Prasadham to the devotees.They added a pinch of raw turmeric powder, a pinch of Black Pepper Powder and fresh curry leaves at the end..That excellent tip stuck on my memory forever and everytime when I crave Puliodharai I make pulikachal mix, follow this simple step and one delicious Kovil Prasadham style Puliodharai will be ready within 30 minutes
You can store this Pulikachal for two to three weeks in fridge. With the following measurements you can approximately prepare 1 cup of Pulikachal Paste and that can be added to 3 cups of Cooked Rice. If you want to prepare more then kindly increase the quantity of Tamarind & then add spices accordingly.. Use generous amount of Sesame oil. Don’t skimp on that since sesame oil gives such a lovely flavor to Puliodharai. I highly recommend you to use Sesame Oil for this preparation. In case if you don’t have the oil then replace it with Vegetable Oil or Sunflower Oil. Coconut Oil has its own unique taste and I personally don’t use that oil while making Puliodharai.

- 1 tbsp Channa Daal
- 1 teaspoon Black Pepper Corns
- 1/2 teaspoon Methi Seeds
- 2 tbsp Coriander Seeds
- 1 small Dried Red Chilli
- 1 teaspoon Black Sesame seeds
- 1/2 teaspoon Hing
- 1/2 teaspoon Oil
- 3 tbsp sesame oil
- 2 tbsp tamarind
- 2 teaspoon turmeric
- 1 teaspoon Black Pepper Powder
- 2 teaspoon salt add extra if you want when you taste test
- 1 teaspoon hing/Asafetida
- 2 dried red chilli we have already added one Red Chilli while making spice powder and we have added black peppercorns too..In case if you want a really spicy pulikachal mix you can add more chillies instead of 2 🙂
- 2 teaspoon Mustard Seeds
- 2 teaspoon urad dal
- 2 teaspoon Channa Dal
- 1 tablespoon Roasted Peanuts i didn't have peanuts while preparing it so it is not in the prep pictures but do add peanuts for that extra crunch in the rice
- Few Curry leaves

- Soak Tamarind in 2 cups of warm water for 15 minutes and extract Pulp
- Heat 2 tablespoon Sesame Oil in a pan
- Add Dried Red Chilli,Peanuts (if you have) and Hing
- Continue sauteing for few seconds
- Add Tamarind Pulp,salt, turmeric and let it boil in medium flame
- In the meantime lets prepare the spice powder
- Heat little oil in a pan and roast all the ingredients mentioned under 'Spice Powder' section
- Once it is cooled down prepare powder using a mixie
- Now add this spice powder to the boiling tamarind water
- Mix everything together and let it boil for another 5-7 minutes
- You can see the paste becoming thick
- At this stage add half a tablespoon of sesame oil. Give it a mix and let it boil for another 2-3 minutes
- Thick Pulikachal Paste is now ready
- Let the paste cool down for few minutes and now add cooked rice. Make sure the rice is not too hot. Hot rice might get mashed when we try to mix
- Use a fork and mix everything well
- At this stage add Turmeric Powder, Black Pepper Powder, remaining half tablespoon oil and some fresh curry leaves (if you have). Mix everything together
- Adjust salt
- Delicious Kovil Prasadham style Puliodharai is ready 😋
