In the ‘Deepavali Special’ snack series today am sharing recipe for Pottukadalai Murukku (Roasted Gramflour murukku). I have used single star plate (ஸ்டார் போட்ட அச்சு) to prepare these murukkus. This is the first time I am using that plate and hence it took a while for me to shape murukku perfectly. Apart from that this is such a delicious, crunchy yet melt in mouth savory snack.

Ingredients
- (u0baau0bcau0b9fu0bcdu0b9fu0bc1u0b95u0bcdu0b95u0b9fu0bb2u0bc8) 1 Gram Roasted cup
- 3 tbsps Besan Flour Chick Pea flour / (u0b95u0b9fu0bb2u0bc8 u0baeu0bbeu0bb5u0bc1)
- 3 tbsps Rice flour (u0b85u0bb0u0bbfu0b9au0bbf u0baeu0bbeu0bb5u0bc1)
- 1 tbsp Butter
- 1/4 tbsp Salt
- 1/2 tbsp Jeera Seeds
- 1/4 tsp Hing
- 1/2 tsp Chilli Powder (optional)
- Oil for frying

Instructions
- In a mixie, grind the roasted gram to fine powder
- Sieve roasted gram flour, besan flour and rice flour separately.
- Take all the ingredients except oil in a wide bowl.
- Mix everything together. Start adding water little by little and then form a smooth dough.
- The dough shouldn't be too sticky.
- Close the vessel with a warm cloth. This prevents dough from drying out too quickly.
- Now grease the murukku press(u0baeu0bc1u0bb1u0bc1u0b95u0bcdu0b95u0bc1 u0baau0bbfu0bb4u0bbfu0bafu0bbfu0bb0 u0ba8u0bbeu0bb4u0bbf) with little oil and then fill it with dough.
- Use 'One star' (u0bb8u0bcdu0b9fu0bbeu0bb0u0bcd u0b85u0b9au0bcdu0b9au0bc1) plate as base and then start shaping murukku on a separate ladle as shown in below picture.
- If you want to use thenkozhal plate (the one with 3 holes), you can use that as well, to shape murukku.
- Heat oil in a kadai and then immerse this ladle in oil.
- Fry in a medium low flame and wait until they turn golden brown.
- If you are using chilli powder, the color might change quickly but sometimes it would be chewy. So just try to fry murukku in a low to medium flame.
- Remove the murukku from oil and drain any excess oil.
- Crunchy Roasted Gramflour murukkus are ready to be served with hot tea or coffee.
