Potato is my favorite root vegetable. Podimas is slightly different from the usual potato fry. You don’t need to use too much of oil or spices. Very simple yet delicious one. This is my grandmother’s recipe. She is a great cook who never tastes inbetween cooking. But the end product will be awesome. She makes sure that her grandchildren are well fed and treats us like King or Queen. Feeling nostalgic about the summers spent at her house and nobody can replace her in this whole world. She is no more but my heart is filled with beautiful memories of her.

Ingredients
- 4 potato
- 1 onion
- 3 Green Chillies
- 1/2 tsp ginger pieces
- 1/2 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp turmeric
- 1/2 tsp Mustard seeds urad dal , each
- Curry leaves coriander leaves , for garnishing

Instructions
- Pressure cook potatoes up to 3 whistles and keep them aside
- Chop onions finely
- Heat oil in a non stick frying pan and add mustard,urad dal, curry leaves
- Let them splutter
- Add green chillies, ginger and chopped onions. Saute them for about minutes 3 4
- Add salt, turmeric and hing
- Once the onions become translucent add the cooked potatoes
- Mix them thoroughly
- Simmer the pan and let the potatoes be cooked with spices for another minutes 10
- Turn off the stove and add lemon juice
- Garnish with coriander leaves before serving
- Podimas is slightly tangy & less spicy. Hence this even use it as a side dish for roti or poori can be served with vethakozhambu or rasam. You can
