I have made variations of this White Sauce with different flours(whole wheat, plain flour) & cheese combinations. However this simple sauce that I make with Corn Flour,milk, Cheddar cheese is my most favorite one. This is a fool proof recipe. It tastes delicious and sauce is so creamy.As always if you are a vegan use substitutes accordingly. I have used Fusili pasta. You can use Mac, Spaghetti or any variety of Pasta
One important note is that you need to ‘Keep Stirring’ after you add the milk to the pan. That is the only way you could get silky smooth sauce without any lumps. Also make sure to drain all the water from Pasta before adding it to the pan. The amount of cheese mentioned here is based on our preference. You can also combine two different varities of cheese while making the sauce. If you are adding veggies I would reccommend you to first slightly stir fry them separately with salt & peppe and then add it to the sauce.

- 2 cups Cooked Pasta
- 2 tbsp butter
- 2 tbsp corn flour
- 2.5 cups milk
- 1/2 cup cheddar cheese +1/4extra to add before serving
- 1/2 tbsp Black Pepper Powder
- 2 Tsp Salt Salt will be added three times at different stages
- 2 tbsp Dried Oregano
- 1 tbsp Red Chilli Flakes
- 1 tsp Dried Parsely or Rosemary if you have mixed italian herb seasoning then add it
- 1 tsp olive oil

- In a large pot boil water
- Add a tiny pinch of salt and olive oil. Let it come to rolling boil
- Add Pasta and let it cooked in medium heat for around 12 minutes. Once they are cooked. Drain water and wash them in cold water. Keep it aside
- Heat a tsp of butter in a frying pan. Add chopped garlic and mushrooms
- Let the mushrooms get cooked for 2-3 minutes. It will start to release water, shrink in size and you can see the sides turning brown
- At this stage add a pinch of salt and black pepper powder
- Give it a mix and keep the mushrooms aside
- You can just wash the pan and reuse it to make the white sauc
- Heat remaining butter in the pan and once it starts melting add corn flour
- Use a wooden spoon or any regular spoon to mix flour with butter
- Turn the heat to low and add milk. Start stirring. If you have a wire whisk you can use it to clear the lumps or else use any regular spoon or ladle to continue stirring
- After nearly 3-4 minutes you can see the milk starts to thicken
- Add grated cheese, black pepper powder and mushrooms
- Mix it well and add cooked pasta
- After 3-4 minutes turn off heat, add some more grated cheese, dried herbs and red chilli flakes
- Cheesy Mushroom Pasta is ready to be served
