I don’t remember how & when I started eating paneer but this has been my most favorite ingredient to cook with. There are so many variations you could make & honestly if you dont have time to cook elaborately, just toss the paneer cubes in butter until golden brown and that tastes great too without adding sauce or spice. Luckily Mr.S is also a paneer addict just like me & have been including it in our weekly menu atleast once or twice.
Paneer Jalfrezi is probably one of the easiest way to cook cottage cheese but tastes absolutely delicious. It is similar to the regular stir fry of veggies however adding paneer elevates it to another level. Perfect side dish to Rice & Roti.
My Notes :
Though the recipe sounds simple there are few tips you could follow to achieve restaurant quality
1. Cook the recipe on a wok instead of a flat frying pan
2. Vegetables should be roasted well for 5 minutes
3. Cook in a medium high flame to give that smokey flavour to the dish
4. All you need is less than half cup of water while preparing this dish.. Adding too much of water will reduce the taste
5. Chop the veggies lengthwise
6. I would suggest you use kashmiri red chilli powder to get the lovely reddish colour for the dish

- 200 gms Paneer
- 1 onion
- 2 Large Tomatoes deseeded
- 2 capsicum different colours would be great
- 1 green chilli
- 1 tbsp chopped ginger garlic pieces
- 2 tbsp Oil
- 1/2 tsp Turmeric Powder
- 1 tsp Kashmiri Red Chilli Powder or ordinary chilli powder
- 1/2 tsp Coriander Powder
- 1/2 tsp Garam Masala Powder
- 2 tbsp Tomato Sauce or Ketchup
- 1/2 tsp Jeera Seeds
- 1 tbsp Kasuri Methi leaves
- leaves Corianderfor garnishing

- Soak paneer in warm water for 30 minutes..Later squeeze extra water and then slice them, keep aside
- Heat Oil in a wok
- Add Jeera seeds & let it splutter
- Now add finely chopped green chilli and ginger garlic pieces
- Saute well and then add onions,capsicum
- Saute for 7-8 minutes until capsicum is 3/4th cooked
- If you are adding carrots make sure they are sliced thinly.. You can add it now
- After adding carrots add salt,spice powders one by one
- Add tomato ketchup, 1/4 cup water and let the mixture boil for a minute
- Now add paneer, deseed the tomatoes, slice them and then add them too
- On a high flame mix everything together
- Ensure paneer is coated evenly in the spice mixture
- Turn off the hear.. Garnish with kasuri methi leaves & coriander leaves
- Yummm paneer jalfrezi is ready
