Ingredients
- 100 gms Tofu Cottage Cheese or
- 1 cup Vegetables of your choice
- 2 tbsps Balsamic Vinegar
- pinch Salt a
- 1/2 tbsp Oregano
- 1/2 tbsp Pepper powder
- 1/4 tbsp Chili flakes (optional)
- 1 tbsp Olive oil

Instructions
- Cook noodles or rice of your choice and keep it ready
- Chop the vegetables length wise
- I have used onions,cauliflower, garlic, bell peppers, carrot and beans
- Heat olive oil in a pan and first toss the garlic with salt
- Then add in the chopped vegetables
- Keep sauteing until they start to become tender
- At this stage add balsamic vinegar, black pepper powder powder and oregano leaves
- Close the pan and lower the flame
- Let the vegetables get cooked for upto minutes 5 10
- In the mean time toast paneer or tofu to golden brown on a separate pan
- Add the paneer cubes to the vegetable mixture
- Toss it and serve pan fried vegetables along with a bowl of rice
- Quick and yummy lunch is ready in just 15 minutes
