While growing up we all must have heard stories about the super powers of Bhindi/Lady’s fingers. Eating bhindi will increase our mathematical ability etc 🙂 Not sure how far that is true but there are other benefits as well.The proven health benefit is that Okra is good for Diabetes. Since okras are rich in fiber,anti oxidants they help in lowering the blood sugar levels.
Good quality okras will enhance the taste of this recipe. I have seen people complaining about the stickyness texture of Okra. A general tip is first wash them thoroughly and then wipe them with a kitchen towel. Once they start cooking okras will stick together but after 10-12 minutes they start to separate from each other. In case if that didn’t happen then add a tbsp of buttermilk or yogurt to the frying pan. My grandma says that adding buttermilk will stop Okra pieces from sticking to each other.

- 1 cup Basmati Rice Cooked
- 25 Okra (Bhindi)
- 1 Onion
- 1 Tomato
- 1 Green Chilli
- 1 tbsp Chopped ginger garlic , pieces
- Curry leaves few
- 1/2 tbsp Chilli Powder
- tbsp Tumeric a
- 1/2 tbsp Coriander Powder
- 1/4 tbsp Garam Masala Masala Powder MDH Kitchen King or 1/4 tbsp
- 1/2 tbsp Salt
- pinch Hing a
- 1/4 tbsp Cooking oil
- 1/4 tsp Mustard Jeera seeds , each
- Coriander leaves for garnishing

- Clean and wash the okras. Chop them into thin slices
- Chop onions,tomatoes finely and keep it aside
- Heat oil in a frying pan (non stick pan works better for sauteing okras)
- Add mustard seeds, jeera, curry leaves. Let them splutter
- Add ginger garlic pieces, slit green chilli in the pan and saute for a minute
- Now add chopped onions and tomatoes. Add salt,turmeric powder and other spice powders
- Mix everything well and then add chopped okras
- Saute for about minutes and the okras will start sticking together 3 4
- At this stage add a buttermilk or yogurt (this step is completely optional)tbsp
- Make sure the spices and okras are blended nicely. Lower the flame and cover the pan with a lid
- Once the okras are cooked add in the cooked basmati rice
- Use a fork to fluff the rice and carefully mix rice & okra
- Garnish with coriander leaves
- I served with plain yogurtHowever you prepare a simple raita as a side dish or just serve this rice along with some Potato chips or frymes .can
