This is an instant biryani version. With less spices & ingredients the biryani can be prepared within 25 minutes. Mushrooms need very less time to get cooked and hence this recipe comes handy on busy weekdays. I used button mushrooms. Also I added only onion,tomato along with mushrooms. Didn’t want to add too much of veggies. I truely wanted mushroom to be the hero of this dish.
You can serve this biryani with raita or any other gravy of your choice. I prepared strawberry raita. It tasted delicious. The tangy,sour raita with spicy biryani made an awesome combo. Do try these dishes and let me know if you like it.The following measurement serve two people. Adjust quantity accordingly.
Cleaning Mushrooms :
- Dip the mushrooms in a bowl of water
- After a minute, use a kitchen towel and clean off impurities from mushroom
- Then pat & dry it for sometime
- I generally dont remove mushroom stem. Chop the mushroom lengthwise into 3,4 pieces.
Strawberry Raita :
- Chop strawberry vertically into pieces
- Add them in a bowl of creamy yogurt
- Add just a pinch of salt & chat maasala powder
- Mix everything well
- Strawberry Raita is ready to be served

- 1 cup Rice
- 200 gms Button Mushrooms
- 1 Onion
- 2 Tomatoes
- 1 Green Chilli
- 1 tbsp chopped Ginger garlic pieces
- 1/2 tsp Turmeric Powder
- 1/2 tsp Chilli Powder
- 1/2 tsp Coriander Powder
- 1/2 tbsp Garam Masala Powder
- 1/2 tsp Kasuri methi leaves

- Pressure cook Rice and leave the rice to cool down
- Heat Ghee in a wide bottomed vessel.
- Add Bayleaf,cinnamon stick,clove & elaichi
- Saute for a minute. Add Saunf,Mustard Seeds.
- Let them splutter
- Add Green Chilli,ginger garlic pieces. Continue sauteing for a minute. Fresh ginger & garlic is much more flavorful than paste
- Once the garlic turns mildly brown add finely chopped onions & tomatoes
- Saute it for upto 3-4 minutes
- Now add the chopped mushrooms and all dry powders
- In low flame keep sauteing the mushrooms
- It releases water and the spice mixture will get cooked in approximately ten minutes
- Don't add extra water
- The mushroom mixture will turn to dark brown color, at this stage add cooked white rice
- Using a fork mix everything well
- At last add dried methi leaves or you can even add fresh herbs like coriander leaves,mint leaves
- Adjust salt and serve this biryani with raita of your choice
