This is my go-to recipe when I want to make a simple side dish for Rice/Roti/Poori. I usually mix these veggies together (Onion,Carrot,French Beans,Potato,Tomato,Capsicum,Cauliflower/Broccoli).They all make a fantastic combo. You can even add Cabbage,Spinach or any other greens too to make it even more healthier. Such a simple recipe but tastes absolutely delicious. Since I love crunch in the curry, I don’t add too much of water while cooking the vegetables. Since they will soften the texture. Just sprinkle few drops of water while cooking the veggies. The following measurement serves two. Adjust quantity accordingly

Ingredients
- 1 Onion
- 2 Tomato
- 1 Carrot
- 5 Beans
- 1 Capsicum
- 10 Broccoli florets
- 1 tbsp Ginger-Garlic pieces
- 1/2 tsp Salt
- 1 tbsp Oil
- 1/2 tsp Mustard Seeds
- 1/2 tsp Jeera Seeds

- Chilli Turmeric Coriander Masala 1/2 tbsp Powder 1/2 tsp Powder 1/2 tbsp Powder 1/2 tbsp MDH Kitchen King

Instructions
- Chop the vegetables length-wise
- Heat oil in a non-stick frying pan and add jeera,mustard seeds Let them splutter
- Add the veggies one by one
- Saute for a minute and add salt along with other spice powder except MDH Masala powder
- Using a spatula mix everything well
- Sprinkle little water and close the pan with a lid
- Lower the flame and let the vegetables get cooked for about 10-12 minutes
- Open the lid, give it a mix and at last add MDH Masala Powder
- Wait until this raw smell of this powder goes off
- By now the vegetables would have beautifully caramelized and would have absorbed the spices
- Dry curry is ready to be served with Rice or Roti .
- I served this curry as a side with Lemon Rice

Thanks! MDH is a name of a brand. They sell dry spice/Masala powders that can be used in our day to day cooking. Lemon rice recipe is already update in blog.
