One of my favorite breakfasts in recent times 🙂 You get beautiful fresh breads here and am making the most use of it. To spice up the usual normal sandwich I add spicy mint chutney as a spread first and then top it off with veggies. You can even pack this sandwich if you are going on a trip or can serve it to kids as an after school snack.

Ingredients
- 1 bunch Mint leaves Fresh
- 2 Chilies Green
- 4 Pods Garlic
- 1/2 tsp Ginger pieces
- pinch Salt a
- Coriander leaves few
- 1 tbsp coconut Grated
- 4 bread Fresh
- Veggies of your choice for the filling
- 2 tbsps Cheese
- 1/2 tbsp Butter

Instructions
- Wash the mint leaves thoroughly
- Then grind it together along with chilli,garlic,ginger,salt,coconut and coriander leaves
- Add little water while grinding
- Adjust salt to taste
- If you don'like the raw smell of Mint and then slightly roast the ingredients on a pan. Then grind it together t
- First heat pan with butter and toast the bread slices
- Spread chutney on top of it.Align the vegetables and sprinkle cheese.
- Place another toast and slightly press it with your palm.
- Cheese helps the veggies to stick with each other.
- If you have sandwich maker pop them in it.
- Cut into halves and serve with fresh juice/coffee.
