I have already shared a simple Homemade granola recipe before and in this below recipe I tried adding natural sweetness from Dates and Apple to the Granola. I usually make a batch of granola once in a while and pack it in an airtight container. Husband usually keeps that box in his office and its a perfect guilty free snack to enjoy during coffee time. I too love adding granola as a topping to my smoothies, have it as a mid-morning snack and sometimes I add milk with it and have it as a breakast, Yogurt+berries along with Granola makes it as one wholesome breakfast too.
The nuts, seeds in the Granola are so filling and adding fruits+drizzle of honey makes it even more delicious. You can prepare it in stove top itself and you don’t need an oven to bake them. Also the addition of Nuts and Seeds are totally based on the availability in your pantry and your choice of preference.
Building a granola is basically very simple.. Choose ingredients from the following categories and create your own mixture. I have listed whatever came to my mind while typing this recipe 🙂 You can always add your preferred ingredients apart from the ones mentioned below too 😊
Base : It could be plain Oats or could even be a combination of grains like Oats, Rye, Barley,Quinoa, Rice crispies, wheat flakes etc
Nuts : Almonds, Pistachios,Cashews,Peanuts,Pine nuts
Seeds : Pumpkin Seeds, Hemp Seeds, Sunflower Seeds,Flax Seeds, Chia Seeds
Dried Fruits : Apricots,Figs,Raisins,Prunes,Dates

The below recipe yielded around 4.5 cups of Granola. This is the first time I tried adding Apple puree and Dates paste for sweetness along with some honey. Its been a week since i made this batch and it still tastes good. You don’t have to store it in refrigerator.

- Heat a tsp of Coconut oil in a pan and add Almonds.
- I didn't chop the almonds and added as it is. If you want you can chop them
- Once they are getting roasted add walnuts
- In medium heat roast them well
- After around 5 minutes add Pumpkin Seeds and other nuts and seeds
- Add salt. Mix everything well
- After about 2-3 minutes (or until they are all roasted) transfer them to a plate and keep it aside
- In the same pan add Oats and turn the heat to low
- Roast them until a nice aroma comes through
- Add remaining salt and continue roasting
- In the meantime make a paste out of Dates and honey. Keep it aside
- Peel the skin of apple, chop them into chunks and add little water,.make puree
- Now in the pan add Dates+Honey paste, flaxseed meal powder, plain butter. Mix well
- Add Apple puree, vanilla essence and the spice powders (i forgot to take pic of this step)
- Add the roasted nuts and seeds as well
- Mix them all together
- You can transfer the contents to a wider bowl and mix them all together
- If you want extra sweetness you can add more Honey or any sweetner of your choice
- This is how my breakfast looked like. Yogurt+Fresh fruits+Granola and it tasted absolutely delicious
- For making them into bars, transfer the contents to a Baking Tray lined with butter paper and refrigerate for sometime (3-4 hrs Approximately) Shape them into bars.
