Green Gram Dosai or Upma Pesarettu is a popular breakfast in Andhra Pradesh. This Pesarettu / Mung Bean dosai is generally served alongside Semolina Upma and Ginger Chutney. A filling & healthy breakfast too. Upma recipe is not yet updated in the blog yet. Shall add soon. I have made an instant version of Pesarettu too using Green Moongdal Flour/ Paasipayaru Maavu.
I have made different proportions of Pesarettu batter. Of all the combinations I have tried so far 3:1 turns out perfectly everytime. 3 portions of Mungbeans and one portion of Idli Rice is all you need. You can also add Fenugreek seeds and a tbsp Urad dal if you want while soaking. They add a good taste and texture to the batter. With the following measurement 15-18 medium size dosais can be made. You can serve this with Ginger Chutney, Onion Tomato Chutney , Garlic Powder, Idli Molagapodi or Saambaar

- 3 Cups Mung Beans/பாசி பயறு You can use either whole green gram or split green gram

- Soak Green Gram and Idli Rice together in water for about 3 hours
- Grind soaked dal mixture, along with Red chillies, ginger, curryleaves and coriander leaves together. Add water at regular intervals
- The batter should be very smooth. Add salt and hing to the batter after grinding.
- Leave the batter to ferment for about 2-3 hours. You can also start making Dosais immediately. I prefer it to be fermented atleast for sometime so that there is a mild sourness in the batter.
- Heat a tsp of Oil in Dosa Tawa. Add some curry leaves, finely chopped onions, a pinch of salt and some finely chopped green chillies
- Saute until onions are golden brown. Keep this aside. Now spread the batter in dosai tawa, sprinkle onion and drizzle oil
- Wait until one side is cooked and carefully flip the dosai. Let the other side get cooked for a minute too. Then serve the dosai with chutney of your choice 😋😋
