The idea of making soup from an apple might sound weird since we mostly use Apples in pies, smoothies, crumble recipes. Trust me this soup is such a comfort food during winters. The natural tart & crispiness in the Green Apples are perfectly balanced with our Indian spices. Moreover Green Apples are rich in antioxidants, dietry fibre and has various other health benefits. I haven’t removed the skin of these apples while cooking since the nutrients are present in their skin too. Marks & Spencer is our goto place to buy fresh fruits. These apples are from M&S too.
The recipe is adapted from BBCGoodFood website. The original one uses cauliflower, fresh herbs like thyme along with apples but I didn’t use cauliflower.
The same recipe can be followed with the regular apples too however the soup will be on the sweeter side. I shall try it out sometime and update here with my opinion. I am sure this soup can be served to kids & toddlers too, they will like it. With toasted garlic bread this can be one whole balanced meal. The following measurement yields a bowl of soup as shown in the pictures below. Kindly increase or decrease quantity according to your needs.

Ingredients
- 2 Apples Green
- 1 onion
- 2 Green Chillies
- 1/2 tbsp chopped ginger finely
- 1 tbsp chopped garlic finely
- 1/2 cup milk
- 1/2 cup water
- 1/2 tbsp salt
- 1/2 tbsp white pepper powder
- 2 tbsps Walnuts
- 2 tbsps Pumpkin Seeds
- 1 tbsp butter

Instructions
- Wash the apples, remove seeds and chop them into cubes. Chop an onion into bigger chunks
- Heat butter in a non-stick pan, once they start melting add onions, ginger & garlic pieces
- Let them caramalize well and then add green chillies, green apple pieces too On a medium flame, keep sauteing the apples for 2-3 minutes
- Add 1/2 cup of water and wait until the apples become soft and cooked thoroughly
- I didn't have vegetable stock handy hence cooked the apple mixture in water. However if you have readymade stock cubes, cook them in stock for extra flavour.
- Once the onion+apple mixture is cooked grind them to a smooth paste
- Transfer paste to the pan, add salt, pepper powder & milk. Bring it to boil and turn off the flame after 4-5 minutes
- Adjust seasoning and if you have fresh herbs like Mint or Coriander leaves you can add them to soup right now. Serve them hot
- I toasted walnuts & pumpkin seeds in oven. Garnished my soup with these nuts and served them with store bought Italian Bread Sticks
