Deepavali is in a week’s time and I thought of sharing some festival recipes that can be prepared easily. First on the list is this awesome Gram Flour Laddoo (கடலை மாவு லட்டு). My mother’s recipe and made it for the first during Navarathri , turned out perfectly well. Do read the notes before starting to make the laddu. From the measurements given below you can make 12 medium sized laddoo. Kindly increase quantity according to your requirement
Notes :
1. Sifting Gram Flour helps to remove lumps and yields smooth Laddoo
2. Don’t add more sugar than mentioned in the recipe. It will be difficult to shape them
3. I have seen people adding tiny bit of roasted semolina to add some texture & also to ease the process of shaping this ladoo. However I didnt add yet it came out well. Incase if you are unsure about the texture or shape you could very well add 1/4 cup of roasted rava along with gram flour
4. Good Quality ghee is really important as it adds flavor
5. In case if your laddoos start sinking and lose its shape don’t worry. Leave it for 2-3 hours and try shaping them. You will be able to make perfect round laddoo

- 2 cups Gram Flour
- 1 cup Ghee Butter /Clarified
- 1/2 cup sugar powdered
- 1 tbsp Cardamom Powder
- 10 Cashewnuts
- 10 Pistachios
- 10 raisins

Instructions
- Sift gramflour thoroughly and remove lumps, impurities
- Heat a thick bottomed vessel (i used a pressure pan) and start roasting gram flour
- Keep the flame low and roast for atleast 10-15 minutes. This step is important because you don't want laddoos to be raw
- While roasting, please ensure you keep on sauteing the gramflour or else there are chances that they might change into dark brown color
- When you get a nutty aroma of gram flour start adding ghee
- Stir the ghee+gram flour mixture continuously and add cardamom powder
- Once the mixture turns solid, start leaving from the pan turn off the flame
- Let it cool down for atleast 45 minutes In the meantime powder 1/2 cup of sugar finely and roast cashews, raisins in a tbsp of ghee
- Mix sugar & nuts to gramflour
- Start shaping them to laddoos. Make this delicious melt in mouth Gram Flour laddoo during Diwali and am sure your family will love it
