Samba Ravai Upma used to be a regular dinner menu for us atleast once a week. Have been meaning to try some other recipes using this Daliya/Broken Wheat. Taking inspiration from the regular Rava Idli I made this Broken Wheat Idli along with Oats. It turned out to be delicious. You can make this Idli either with Instant Yeast or Baking Soda+Lemon Juice. Adding them helps in giving the right texture to Idli. To the idli batter we can also add veggies of our choice. This makes it a wholesome, nutritious and filling breakfast. I have tried the recipe with both these options and the idlis turned out well either ways. Based on the availability of the ingredients you can choose your option.

Always powder the Oats before adding it to the batter. In case if you don’t have Oats you can skip it and make this Idli with just Broken Wheat

In a pan dry roast Samba Ravai/Dalia before prepping the batter. Roasting helps in removing the raw smell of Dalia and also it helps in speeding up the cooking time

If you are using yeast you don’t have to rest the batter much. Within 15 minutes you can start making Idlis

When using Lemon Juice + Baking Soda combo instead of yeast you might have to reat the batter for atleast 45 minutes to one hour.

You can add cashewnuts and veggies of your choice. Roast them well before adding it to the batter.

- 1 cups Broken Wheat கோதுமை ரவை
- 1/2 cup oats
- 1 cup yogurt
- 1 teaspoon Instant Yeast
- 1 teaspoon coconut oil or any cooking oil
- 1/2 tsp Mustard Seeds
- 1/2 tsp Jeera Seeds
- 1/2 cup Chopped Veggies Onion,Carrot,Tomato,Beans
- Few Curry leaves coriander leaves
- 1 tbsp Oil to apply in idli plates
- 1/2 tsp Chilli Powder
- 1/2 teaspoon Hing
- 1/2 tablespoon salt for both veggies and the batter

- Grind Oats in mixie to a fine powder. Heat a frying pan and dry roast Broken Wheat in a medium flame for few minutes.
- In a bowl add Oats powder, roasted broken wheat, instant yeast, yogurt and a pinch of salt
- Add enough water to it and make it as a thick batter consistency. Make sure there are no lumps in the batter.
- Let the batter rest for 15 minutes. If you don't have yeast you can add 2 tablespoon Lemon Juice & 1 teaspoon Baking Soda in the batter. However you have to reat it for atleast 45-60 minutes.
- Now heat oil in a pan and add mustard seeds, curry leaves and jeera seeds. Saute for a minute
- Add grated carrot, onion, finely chopped beans and tomato. Saute for a minute.Add chilli powder, hing and salt. Mix it all together. If you want you can also add some cashewnuts and frozen peas.
- Add this veggie mixture to the batter
- After approximately 10-15 minutes start making idlis. Grease the Idli with oil and fill it with batter
- Let it get steamed for atleast 12 minutes in medium flame. Then insert a tooth pick and see if it comes clean.
- Broken Wheat Oats Idlis are ready to be served. I served them with Garlic Podi and Coconut Chutney.
