Baking is not my forte. I will happily cook a decent vegetarian meal even for 25 people but to bake a simple cake/cookie/biscuit I hesitate a lot. The electric oven in this apartment is really good and one of the goals for this year is to bake as much as possible and to learn as many tricks as possible. Now that Aadhu is in a growing stage she loves to snack a lot. These Apple muffins are perfect for evening snack. It is filling too.
The following measurement yields 6 medium-sized muffins. I used only a wire whisk to mix everything together. You can add nuts if you want. I just used choco chips for toppings. They weren’t dense, the texture was great too. Loved the crumble

Dry Ingredients
- 1 cup Wholewheat Flour
- 1/2 cup Rolled Oats
- 1/4 cup sugar
- 1/2 teaspoon baking soda
- 1/2 tablespoon baking powder
- pinch Aof Cinnamom Powder
- Choco chips for garnishing
Wet Ingredients
- 1 apple
- 2 tablespoon butter
- 1/2 tsp vanilla essence
- 1/2 tsp Apple Cider Vinegar
- 1/2 cup milk at room temperature. Also have extra 1/2cold milk ready. You can add at last while preparing the batter

Instructions
- Grind Oats and Sugar together to a fine powder
- Peel skin from Apple and puree it in a mixie. You can add little water while grinding
- Sift together wheat flour, oat sugar mixture, baking soda, baking powder and cinnamon
- In a wide bottomed vessel add softened butter, 1/2 cup milk and apple cidar vinegar. Give it a mix
- Though it looks split add the dry flour mixture slowly
- Whisk everything together and add the Apple puree
- Mix everything together and finally add the remaining 1/2 cup milk as well. If your mixture is too runny then reduce 1/2 cup to 1/4 cup
- The muffin batter should look something similar as shown below
- Add Vanilla Essence
- Pour the batter in cupcake tray lined with liners
- Garnish with Choco Chips
- Preheat the oven at 180c
- Bake at 180c for 20-22 minutes. Kindly note that based on the type of oven you are using the time might vary
- After around 15 minutes insert a tooth pick in the centre and check if the muffins are completely baked
- If the centre is still moist then let it get baked for another 5-10 minutes
- Remove them from oven. Let the muffins cool down
- Look at the texture 😋😋 I was so happy with the result today

Yummm.. two doubts
1. Can I leave apple as chunks and not puree em?
2. What’s a substitute for apple cider vinegar..don’t have it at home

Hi Arti I have never baked with Chunky Apples in muffins before. So i wasn’t sure if they will raise evenly..Hence added puree instead. If you want you can try adding pieces and see how it goes ☺️ Also Cider Vinegar helps in giving a lovely light airy texture to cakes & cupcakes.. Baking Soda + Vinegar combination yield this result. You could try substituing with lemon juice..
