Its been so long since I baked cakes/biscuits for little one. Few days back I remember seeing an Olive Oil based cake recipe in SeriousEats website and was planning to bake an Eggless version using EVOO at home. Instead of the usual chocolate flavor I chose Orange this time. I didn’t have enough Cupcake Liners at home so baked this in my loaf tin. After reading few blogs and watching Eggless cake recipe videos I adjusted the measurements, used ingredients that were available in my pantry. All you need is a wire whisk to combine the ingredients. Such a simple and basic recipe with great output. Planning to experiement different flavors like Lemon, Blueberry etc using this as a base recipe 🙂
You can use the same mixture and bake them in Cupcake moulds too. Also since it is my first attempt at making an Orange flavored cake and also baking with Olive Oil I don’t know how the output will be if you try and change the measurements/Ingredients given below 🙂

- 1 Cup WholeWheat Flour
- 1/2 Cup Powdered Sugar
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp Cinnamon Powder
- 1 tsp Orange Zest
- 1/2 Cup Extra Virgin Olive Oil
- 1/2 orange juice
- 1/2 Cup Yogurt
- 1/4 tbsp Cup Milk + 2extra

- Sift together WholeWheat flour, Cinnamon powder, Baking Soda and Baking Powder for atleast 3 times
- In a mixie grind 1/2 cup of Sugar to a fine powder and keep it aside
- Take a wide bowl and add Olive oil, yogurt, milk
- Add powdered sugar and using a wire whisk mix everything well
- Add some Orange zest (Zest is nothing but grated Orange skin) as well
- Slowly add flour mixture to the oil mixute and combine everything together
- A smooth sticky dough like texture will be formed. If the mixture is slightly dry add 1 or 2 tablespoons of milk
- Place the cake mix in a loaf tin or in cupcake moulds
- Top it off with Choco chips
- Bake in a preheated oven at 180c for 25 minutes approximately
- Depending on the oven you have, baking time might change
- As always insert a tooth pick or a fork to test if the center of the cake is cooked well
- Remove from the oven and let the loaf cool down for sometime
- Slice the loaf and serve it as a snack with your evening coffee. Perfect for kids' snack box too 🙂
- Once it is cooled down completely you can store the slices in an air-tight container

Can we use coconut oil instead of olive oil
Hi I haven’t baked with coconut oil.I feel the smell is bit strong.. In case if you don’t have Olive oil try substituting with Vegetable Oil or sunflower oil..
