If there is one goal that I setup for myself after moving to Limerick was to bake more, to learn more about the techniques involved in baking. It intimidates me the most and everytime I bake something edible it makes me so happy 😬😅😅 I wanted to make use of the oven here as well as wanted to bake homemade snacks for my Little One . She loves muffins and biscuits and have tried few recipes the past month. I initially thought of making banana muffins but since I wanted to use all the 2 large overripe bananas at home, turned it into a cake. You can use the same recipe and bake it as a loaf or cupcakes too (should yield around 12 medium sized cupcakes approximately)
Its a pretty simple recipe adapted from AllRecipes website. The original recipe had used an egg along with the other ingredients mentioned below. I skipped adding egg, instead added extra butter and a tsp of Apple Cider Vinegar..

- 1 cup plain flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp Cinnamon Powder
- 1/2 tsp salt
- 15-20 Choco Chips
- 15-20 Pumpkin Seeds & Hemp Seeds You can subsitute it with walnuts or almond flakes too
- 2 Riped Bananas
- 4 tablespoon Melted Butter
- 1 tsp Apple Cider Vinegar
- 1 tbsp vanilla essence
- 1/4 cup sugar

- Sift together Flour, salt,baking soda, baking powder and cinnamon powder
- Use fork and mash the bananas
- Add 1/4 cup sugar, melted butter and mix it together. If you have an electric mixer use that in Speed 1 for few seconds. Or use a wire whisk
- Later add vinegar and vanilla essence. Keep it aside
- Now fold the dry ingredients gently over the wet ingredients
- The mixture shouldn't be too dry or too runny. If you find the mix to be slightly dry add extra melted butter or few spoons of cooking oil
- Line the cake pan with baking paper and transfer the batter
- Top it off with nuts and choco chips
- Bake it in the preheated oven for 20-25 minutes approximately at 200c
- Depending on your oven the time might vary. Use a tooth pick or a fork and check the centre of the cake. If it comes clean then it indicates that cake has been baked well
- Let it cool down for 10 minutes. Then slice them into squares
- Perfectly moist, flavorful banana cake is ready.
