This is warm salad. I used leftover cooked couscous from the previous day. Asparagus shoots are so much healthy with lot of minerals in it. If you prefer a low calorie yet filling salad then do try this one.
Buying & Cleaning Asparagus :
Fresh asparagus always has a tender stem without any split or dried stem.
If the stem is woody and thick this means the asparagus bunch is old. So kindly pick a fresh one for better taste and easy cooking.
In a bowl of cold water first rinse the tips.
Then take a fresh bowl of water and wash the stem part.
Wash them again in running cold water.

- 5 10 Button Mushroom
- half bunch Asparagus
- 1 Tomato
- 10 pods Garlic
- 1 tbsp Olive oil
- pinch Salt a
- 1/2 tsp Black pepper

Instructions
- Heat olive oil in a non stick pan
- Add garlic mushroom, a salt and keep sauteing for minutes pods, pinch of 2 3
- Once the mushrooms start to become tender remove from pan
- In the same pan saute asparagus stem and tomato until they are soft
- Serve along side couscous and sprinkle herbs of your choice on top of the salad
- Easy and healthy salad that can be eaten at any time of the day : )
