Have never cooked Courgettes until I was in Chennai. If you give me any new vegetable (the ones that I haven’t cooked before), all I can think of is how to cook a SouthIndian recipe using it. Courgette/Zucchini is a summer squash vegetable popular in UK.Its texture slightly similar to Cucumber & I have made Courgette Kuruma (thick stew using coconut paste), Koottu (lentil based gravy) before. Last weekend I thought of preparing Pakoda from it. Initially I wasn’t too sure how it will work so thought of adding some carrots along with courgette. Turned out so delicious and this is my own recipe. Instead of the usual Onion Pakoda/Pakora try this and am sure you will like it too.
I bought this handy cheap spiralizer during a sale. I use it for salads mainly. Instead of grating Courgette & Carrot i used this spiralizer. In case if you don’t have it , use your knife & make thin strips.

Ingredients
- 1 Courgette / zucchini
- 1 Carrot
- 1 cup Gram Flour
- 4 tbsps Rice Flour
- 1/2 tbsp Chilli Powder
- 1/2 tsp Turmeric Powder
- 1/2 tsp Hing
- 1/2 tbsp Seeds Carom
- 1/2 tbsp Salt
- 1 tbsp Oil
- Curry Leaves Few
- Oil for deep frying

Instructions
- Spiralize the veggies and roughly chop them
- Place the veggies on a kitchen towel and squeeze them. This removes moisture and helps in keeping the pakoda crispier
- Add gram flour, rice flour, salt, ajwain, hing, chilli powder & turmeric one by one
- Mix everything well
- Add 1 tbsp of oil. Oil will bind the veggies & flour mixture together. Dont add water
- Make sure the vegetables are coated well with flour
- Heat oil in frying pan and start frying pakoda
- I usually take the mixture in my hands & roughly portion them out & drop them in oil. Or you could use a spoon and drop the mixture in oil
- Fry until golden brown
- You could serve this as an evening snack or as an appetizer in parties or as a sude dish for lunch. You can even add onions,capsicum along with courgettes.
- I served this delicious pakoda/pakora with Rice and Daal. Tasted heavenly.
