One of our most favorite restaurants in Chennai is Eden. Each and every item on their menu is mouth watering, delicious and you can add all adjectives to that Food.
My personal favs in their menu are Corn on Toast/Corn Florentine, Paneer Shaslik & Babycorn fry.
Got some fresh Corn yesterday and the first thing that came to my mind was this gorgeous yet simple dish. You can have it during breakfast or you can even prepare it as a snack for kids in the evening. It will take around 15-20 minutes to put together this entire toast. You can adjust the measurements if you are serving more than 2 people. I have used wholemeal bread, however you can use normal white bread/wheat bread/multi grain bread too.
My Notes :
- Since the white sauce will get thickened over time make sure you have everything ready and start the process
- Start making the Corn+Onion+Tomato mixture first. While it is cooking start making the sauce
- When you are almost done with the gravy toast the bread to golden brown color

Ingredients
For Sauce :
- 1 tbsp butter
- 1 cup milk Keep 1/4 cup extra if needed
- 1/2 cup Grated Cheese
- 2 tablespoon all purpose flour
- 1 teaspoon Black Pepper Powder
For Corn mixture :
- 1/2 cup Corn Kernels
- 1/2 tsp Oil
- 1 onion finely chopped
- 1 tomato finely chopped
- 1 teaspoon Chilli Powder
- 1 tablespoon Kasuri Methi leaves you can also substitute this with dried italian herbs like Basil, Oregano

Instructions
- Heat butter in pan and add 2 tablespoon all purpose flour.
- Keep sauteing for a minute so that flour gets mixed with butter.Using a back of your ladle press the flour so that it incorporates well with butter
- Turn the gas stove to low flame and then start adding milk.
- Keep on stirring and ensure no lumps are formed
- Add cheese at this stage. Let it melt.
- Season it with black pepper powder. Since we are already adding cheese make sure to taste and then add salt if needed.
- Before starting to make this white sauce we need to first ensure that Corn mixture is ready.
- Saute onions,tomatoes with chilli powder.
- If you are using frozen sweet corn you can just wash it with water and add them directly to the pan. However if you are using fresh corn kernels you need to boil them until they are soft. Then add them to the onion tomato mixture
- Let them get cooked for about 4-5 minutes.
- Now add this corn mixture to the white sauce that we made
- Toast whole wheat bread separately and pour the corn mixed white sauce over them.
- Sprinkle some kasuri methi or dried herbs on top of it.
- Serve them hot.

Sorry missed mentioning the ingredients clearly. Have updated the post. You will need approximately two tablespoon of All Purpose Flour. The gravy yielded can be used on top of 4 toasts. Adjust measurements accordingly.
