This is the first time I prepared Corn Chowder and absolutely loved it. Since I was preparing it for my dinner I thought of keeping it light & low in calories. I skipped adding Butter+Plain Flour. I know those two components gives that richness to the soup but luckily I had Nutritional Yeast in the pantry. The cheesy nutty flavor in Nutritional Yeast helped in thickening the soup.
If you don’t have an Instant Pot you can prepare this in regular pressure cooker too. Substitute Nutritional Yeast with 1 tablespoon All Purpose Flour + 1 tablespoon Corn Starch or add 2 tablespoon All Purpose Flour alone.If you are a vegan add Oat/Almond/Soy milk instead of Plain Milk

- 1 cup Frozen Sweet Corn
- 1 Large Potato
- 1 red onion or regular white onion
- 1/4 inch ginger
- 4 Garlic pods
- 2 tablespoon Nutritional Yeast substitute with All Purpose Flour & Corn Starch
- 1 cup plain Milk Add extra milk if needed.
- 1 teaspoon salt
- 1 teaspoon Black Pepper Powder
- 1 teaspoon Dried Parsely or any herb seasoning
- 1 teaspoon Finely Chopped Spring Onion for garnishing
- 1/2 tablespoon Extra Virgin Olive Oil substitute with butter or coconut oil

- Turn on Saute Mode in Instant Pot
- Add Oil. Once it is hot add finely chopped onions,ginger and garlic
- Saute for a minute. Then add chopped Potatoes and a cup of Sweet Corn
- Add salt,pepper powder,dried Parsely. Mix everything together.
- Make sure to deglaze the pot by adding litte water if needed
- Then add half cup of water
- Turn off 'Saute' mode and turn on 'Pressure Cook' mode and ensure the setting 'High Pressure' is turned On
- Set the timer to '8' and once the timer is off manually release pressure after 3 to 4 minutes
- Now turn on 'Saute' mode and add a cup of milk & 2 tablespoon Nutritional Yeast
- Keep stirring the mixture and let it boil for 3-4 minutes until the Chowder reaches thick creamy consistency. If you want you can add extra milk too
- If you want you can blend the soup. I didn't blend it. I loved eating the chunks of sweet corn & perfectly cooked potatoes
- Adjust salt. Garnish the Corn Chowder with Spring Onions or any fresh herbs
1. If you are preparing this directly in Pressure Cooker make sure to add enough water so that the corn & potato don't get burned
2. If you are using All Purpose Flour & Milk to thicken the soup then first mix the two well and then add it to Pressure Cooker or Instant Pot. This way flour don't become lumpy
