Yesterday I baked this delicious Chocolate cookies and hands down this is the best cookies I have ever baked. Am not a big fan of chewy cookies. Came across Nigella Lawson’s Christmas Cookies recipe post few days back and thought of giving it a try. Her recipe has a chocolate glaze too to pour over the cookies but I skipped that part.
The following measurement yields 16 cookies and kindly adjust measurements based on your requirement. The cookie dough will be super soft to shape. If you have a disposable gloves you can wear them and shape the cookies if you want. Do not reduce the amount of Butter. It gives that crunchy texture to Cookies.

Ingredients
- 1 cup Self Raising Flour you can use Plain Flour with a teaspoon of Baking Powder
- 1/2 cup Powdered Sugar
- 1/2 cup butter
- 1/4 cup Dark Cocoa Powder
- 1 teaspoon baking soda
- 1 pinch Cinnamon Powder
- 1 tbsp milk
- 2 teaspoon vanilla extract

Instructions
- Cream butter and sugar together. You can use hand mixer. It will take approximately 3-5 minutes.
- Sift flour, cocoa powder and baking soda together
- Now add this to the Butter+Sugar mixture
- Add milk, cinnamon powder and vanilla extract
- Use your hand mixer and just bring it all together. In the low level setting beat it for a minute or two
- Don't worry if the cookie dough mixture looks little crumbly. Use your hands and bring them all together
- Once you form the dough pinch a small ball and make a disc by pressing against your hands
- The choco discs will look like the ones below
- Preheat the oven at 180c for 10 minutes
- Bake the cookies for around 13 minutes. After that open the oven and check the cookies. If they are too soft then let it bake for another two minutes
- Remove them from heat. Let it rest for few minutes
- Initially the cookies might be soft but they become crunchier once they cool down
- Crunchy delicious Chocolate Cookies are ready
