Gulab Jamun will always be in our Deepavali menu. But this year I thought of preparing a different dessert. Carrot halwa is such a delicious dessert and its Shiva’s favorite too.With generous amount of ghee,sugar (Come On Stop counting Calories!! its ‘Diwali’ ) halwa is much more mouthwatering..It took around 30-40 minutes to prepare. The ingredients are mostly available at our kitchen.We always exchange sweets with neighbors,friends and relatives during this occasion. Hence the following ingredients and measurements can be altered depending on your need.

Ingredients
- 3 Carrot
- 1/4 cup Ghee
- 200 g Sugar (approximately)
- 1/2 tbsp Cardamom Powder
- 250 ml Milk to 300 mls
- 1 tbsp Condensed Milk
- 1/4 tbsp Vanilla Essence (optional)
- Cashew raisins almonds , , few

Instructions
- Peel the carrot skin and grate them finely.
- Heat 2 tbsp ghee in a thick bottomed non-stick pan.
- Roast cashew,raisins,almond and keep it aside.
- Add the grated carrots to the pan and saute for about 10 minutes.
- The flame has to be low to avoid burning of the carrots. If you want the carrots to be cooked well then sprinkle some water while they are cooking (This step is totally optional. I prefer my carrot halwa to be little crunchy)
- You will notice a change in color in the carrots and they would have been partially cooked.
- At this stage add milk to the sauteed carrot and let it cook until carrot absorbs the milk completely.
- Do not add sugar immediately. Wait until the carrots get soaked in milk.
- Later add sugar,a tbsp of ghee and keep mixing. Let the whole mixture cook for about 15 minutes.
- Add cardamom powder and vanilla essence to it.
- At this stage add the roasted dry fruits and the remaining ghee. Mix well.
- Delicious, yummy Carrot Halwa is ready to be served.
