Capsicum or Bell Pepper has a mild sweet pungent taste. It is believed to have anti ageing properties and it is rich in Vitamin C as well.
My mom used to add capsicum in Potato masala and sometimes she prepares sambar out of it. We have never used it extensively. But then one day suddenly she prepared this rice for our Sunday Lunch and it was a surprise for us. The dish was so tasty. She got that recipe from our then neighbour in Coimbatore. Its been our favorite variety rice ever since 🙂 Its so easy to prepare & takes very less time for cooking.
You need to first make a capsicum based mix and then add it to rice. I have never used garam masala for this rice. However if you like the flavor , you can add a tbsp of Garam Masala while prepping the masala mix

- 1 cup white rice Cooked
- 2 capsicum (i used multi color capsicums)
- 1 onion
- 1 tomato
- 1/2 tsp salt
- 1/2 tsp turmeric powder
- 1 tbsp Peanuts Roasted (optional)
- 1/2 tbsp Chilli Powder
- 1 tbsp Coriander Powder
- 1/2 tsp finely chopped ginger pieces
- 1/2 tsp mustard seed
- 1/2 tsp urad dal
- 1/2 tsp Channa Dal
- 2 tsp Oil for cooking
- coriander leaves for garnishing

- First we will prepare a mix using the above said ingredients and then we can add that to plain white rice/brown rice
- Heat oil in a frying pan and add mustard seeds,roasted peanuts,urad dal,channa dal,curry leaves.
- Let it splutter. Now add the chopped vegetables (capsicum,onion,tomato)
- Add chilli powder,coriander powder,ginger-garlic paste,salt,turmeric one by one and saute for few minutes.
- The capsicum masala mix will be ready in 7-10 minutes. Just sprinkle 1/4 cup water for the veggies to get cooked & close the pan
- Don't add more water
- Spread the cooked white rice in a plate or wide bottomed vessel. Add the capsicum masala to it.Using a fork mix it carefully. This will ensure the rice doesn't get mashed up.
- Finally garnish it with coriander leaves.
- You can have this rice with Raita,Potato fry or Pappad.
