In Karnataka, ‘Vaangi Bath’ (Brinjal Rice) is a popular rice recipe that is prepared from fresh spice powder instead of store bought Red Chilli Powder& Coriander Powder combination. This recipe is inspired from Vaangi Bath preparation however the spice powder I used is very simple with minimum ingredients and this rice can be prepared within 30 minutes. A great lunchbox meal that stays fresh, aromatic for a longer time. You can prepare this powder in a large batch and can use it while preparing dry subzi like potato fry, brinjal fry, cauliflower poriyal etc. They taste delicious.
I served this rice with a simple raita and some potato chips. Since I didn’t have green capsicum handy I used colored capsicums (yellow,orange). The following measurement of rice serves 2 people. Kindly adjust measurements according to your needs.

- 3 Chillies Red
- 1/4 cup Coriander Seeds
- 2 tbsps Channa Dal
- 2 tbsps Black Peppercorns
- 1 tbsp Methi Seeds

- 2 cups rice
- 2 capsicum
- 1 onion
- 1 tomato
- curry leaves Few
- 1/2 tsp salt
- 1/2 tsp turmeric
- 1/2 tsp Mustard Seeds
- 1/2 tsp urad dal
- 1/2 tsp Jeera Seeds
- 2 tbsps Peanuts Roasted

Instructions
- Dry roast all the ingredients mentioned under 'Spice Powder' section and grind them to coarse powder. You don't have to add oil while roasting
- Pressure cook Rice upto 4 whistles and let it cool down completely
- Chop capsicum, onion into medium sized pieces. Chop tomato finely
- Heat oil in a non-stick pan add mustard, urad dal,jeera & curry leaves
- Let them splutter. Add peanuts and saute for a minute
- Add chopped veggies and continue sauteing
- Add salt, turmeric, hing and turn the flame low
- Do not add water. It will make the rice soggy
- Within 5-8 minutes the veggies will start shrinking. At this stage add the freshly ground spice powder
- Give it a mix. Once the raw smell of powder goes off, start mixing cooked rice
- Use a fork and make sure rice is completely mixed with capsicum & spices
- Adjust salt and serve the rice with Raita & frymes
- This delicious Capsicum Bath can be packed for train journeys, weekend outings too.
- Notes : Alternatively you can also add Coconut & Peanuts while roasting the spice powder. I have prepared a version of this Capsicum Bath today (14-May-2020) with these two ingredients added to the spice mixture. It turned out delicious too.
