One of my favorite wats to prepare Broccoli.Not much prep time needed & also not much chopping required. All you need is a bit of patience 😉 If you hastily keep turning broccoli florets they tend to break. So wait until the sides become golden brown.You can serve it along with hot fried rice or you can even prepare it for evening snacks. If you want you can deep fry the florets after marinating them in masala mixture (like tamilnadu style pakoda) or else bake them if you wanted it to be healthy and minimize the oil consumption.

- 15-20 broccoli (medium sized florets)
- 1/4 cup gram flour increase quantity if you are preparing a larger batch
- 2 tbsp rice flour
- 1 pinch salt
- 1/2 tbsp chilli Powder
- 1/2 tbsp coriander Powder
- 1 pinch turmeric
- 1 pinch Asafetida
- 4 tbsp cooking oil

Instructions
- Wash broccoli florets and boil them in water along with salt & turmeric in medium flame
- After 3 minutes drain water completely and place them on a kitchen towel & squeeze extra water. Donot boil for a longer time. It will make the broccoli soft and chances are there that it might become mushy when we try to pan fry
- Place the florets on a bowl and then sprinkle the flours, spice powders
- Mix well. Ensure that the florets are well marinated
- Let them rest for about 10 minutes
- Heat 2 tbsp oil in a non stick frying pan. Place the florets in such a way that they are not over crowded.
- After 5 minutes slowly turn sides & let them get cooked..Add the remaining oil and saute for a minute.
- The outer layer of florets will start to crisp up. After aporoximately 10 minutes turn off flame and serve them hot
Recipe Notes
1. Do not add water extra water on the pan when trying to fry them
2. At all times keep an eye on the flame. Low or medium is sufficient

Hi Rekha.. I have been following your posts in Insta… So I wanted to try the broccoli fry from your blog… It came ok.. in step 3 you have mentioned to put all spice powders with that v should check for salt also and add ?! Because I didn’t add when I do and taste was lil blunt…I have just added as you suggested in step 1.. but salt didn’t get carried well in broccoli….I could nt add later since I Completed marinating broccolis..
Another request.. Can you be little elaborate for the beginners like me with more
