We used to call this dish as “Katharikkai Ennai Kari” in Tamil. It is one of my favourite sidedish especially for Sambar rice/Rasam Rice. My mom and grandma are experts in preparing brinjal fry. The aroma from freshly ground spice mix adds a great taste to Brinjal. You can follow the same recipe and stir fry veggies like Eggplant, Capsicum,Potato,Ivy Gourd too. If you dont have fresh coconut you can use desiccated coconut too.

- 8-12 Brinjal Chop lengthwise
- 1/2 tsp Channa Dal
- 4 Dried Red Chillies
- 2 Tbsp Coriander seedsds
- 1/2 tsp Methi Seeds
- 1 tbsp cooking oil
- 1/2 tbsp salt
- curry leaves
- 1/4 cup Grated Coconut (Or coconut pieces)
- 1/2 tsp Mustard Seeds
- 1/2 Tsp urad dal

- Heat 1/2 tsp of oil in a kadai and add channa dal,methi seeds.Roast until they are golden brown. Later add red chillies, coriander seeds and continue roasting for a minute.
- Now add grated coconut/chopped coconut pieces and hing.
- Keep sauteing until the coconut turns golden brown. Now grind them to fine powder and keep it aside. Don't add water while grinding
- In the same pan pour remaining cooking oil and add mustard seeds,urad dal , curry leaves. Let them splutter.
- Add brinjal, salt & turmeric. Sauté them for about 5 minutes and close the frying pan.
- Let brinjal be cooked. After 10-12 minutes add the ground powder which we have prepared.
- Keep frying for sometime until the brinjal becomes slightly crisp in nature. If you find brinjal is soggy then add 1/2 tbsp rice flour or corn flour and mix it well. This will remove moisture and keep the brinjals dry
- Now brinjal fry is ready to be served.
