Growing up am sure we all must have eaten that crispy pink colored heart shaped Beetroot Potato cutlet during our train journeys. Hot cutlets placed in silver foil plate with a side of ketchup/sauce or sometimes even just the cutlets 🙂 No matter how much sleepy you are that aroma from deep fried foods will wake you up during such travel. Masal vadai, kutti onion samosa & Cutlet used to my favorite train journey snacks 😋😋 This Beetroot Tofu tikki is inspired from those n number of cutlets that we have eaten in childhood. Tofu has a distinct smell and few may not be a fan of it. But trust me this dish is so delicious and flavorful you will absolutely love it. A great way to include high protein Tofu in our meal plan.
Beetroot Tofu Tikki is made with few ingredients and also these are pan fried. There is no potato or all purpose flour added to tikkis. I have flax seed powder to bind everything together. These tikkis can be served as an evening snack too. You can prepare Mint Coriander chutney as a side dish.
In case if you don’t have Tofu at home you can try the other versions. You can also substitute Paneer instead of Tofu.
For my Day 27 Dinner I had these Beetroot Tikkis with a salad and creamy Greek Yogurt

Tikkis

- 1 beetroot
- 200 gms Tofu
- 1 onion
- 1/2 cup Frozen Peas
- 2 tablespoon Flaxseed Powder
- 1/2 teaspoon Grated Ginger
- 1/2 teaspoon Red Chilli Powder
- 1/2 teaspoon Coriander Powder
- 1/2 teaspoon Garam Masala Powder
- 1/2 teaspoon salt
- 2 tablespoon Oil

- Wash beetroot well and peel off the skin. Chop them into larger cubes
- Pressure cook beetroot cubes for exactly 2 whistles
- Once the pressure cooked beetroots drain the water and slightly remove moisture by place it on tea towel. Once they are cooled down grate them using a grater and keep them aside
- Heat 1/4 teaspoon oil in a pan. Then add finely chopped onion and grated ginger. Saute for a minute and then add frozen peas. Turn off the heat
- Take a wide bowl. Crumble the tofu, add grated beetroot, flax seeds powder, sauteed onion+ginger+green peas, salt and other dry spice powders
- At last add bread crumbs. Mix everything together

- Shape them into small discs/Tikkis
- Heat oil in a pan and pan fry the pieces
- Let the heat be medium. Cook atleast 4 minutes on each side
- Until you get the crispy coating on both the sides
- Serve this delicious Beetroot Tofu tikki as a snack or you can even have it with Burger Buns.
- I served the tikkis on a bed of Rocket leaves, added finely chopped onions and tomatoes, sprinkled some toasted sesame seeds & a tablespoon of greek yogurt with dried parsely as a dip
