This is one of the simplest Pulao recipes that can be prepared within 30-40 minutes. You need to make a paste with boiled beets and then cook the paste with Rice. I have made Beetroot Rice with grated beetroot too. But in this version I love the way how Beets are completely incorporated with the Rice and even if your kids don’t eat beets its a great way to serve them this ‘Pink Pulao’.
I cooked this rice directly in Pressure Cooker. I used ParBoiled Rice and the amount of water added was based on rice variety I use. If you are going to use Basmati Rice or Sona Masoori rice please add water accordingly. Alternatively you can cook the rice separately, prepare beetroot paste and then in a frying pan cook them together. The following recipe serves two

- 1 cup parboiled rice
- 3 beetroot
- 1 onion
- 2 Small Tomatoes
- 1 teaspoon finely chopped ginger & garlic
- 1 tsp Turmeric Powder
- 2 tsp Chilli Powder
- 1 tsp Coriander Powder
- 1/4 cup plain Milk or you can add coconut milk instead
- 2 tbsp ghee
- 1 tsp Oil
- 2 tsp salt
- 2 Bay leaf
- 1 Small Cinnamon Stick
- 4 Cardamom Pods
- 1 tsp Saunf
- 2-3 Cloves

- Peel Beetroot Skin and chop them into bigger chunks
- Pressure Cook for upto 4 whistles
- Once they are cooled down, grind pressure cooked beetroot with onion,tomato, ginger and garlic
- Add little water while grinding. It will yield approximately 1.5 cup of Beet Paste
- Heat Ghee in a pressure cooker
- Add Bayleaf, clove, cinnamon stick and Cardamom
- Saute for few seconds and add suanf. Let it splutter
- Add Beet Paste and saute for 2-3 minutes in low flame
- Wash & rinse rice and add it to the pressure cooker
- Add 2.5 cups of water and 1/4 cup Milk
- Add salt and other dry spice powders
- Give it a mix
- Add a teaspoon of oil. This is just to prevent Rice from sticking to the bottom of the pan
- Pressure cook for upto 5 whistles. Again this might vary based on the variety of Rice you use
- Once the pressure settles down the rice might look the pic below
- Use a fork and mix everything well
- Adjust salt. Delicious Beetroot Pulao is ready to be served
- I made Baked Cauliower Pakoda and Cucumber Raita to go with this Pulao. Such a simple and delicious meal ready within 30-40 minutes
1. If you have frozen green peas you can add them too
2. If you don't have milk or coconut milk don't worry. Skip that ingredient. I always add milk to the Pulao since it gives a nice creaminess to the Rice
3. I skipped adding garam masala since I wanted this Pulao to be very mild in spice & also wanted the beetroot to be the hero of this dish
